Office Eats: Mango Parfait
Let’s face it. We’re all guilty of wanting to hit that snooze button occasionally to get a few more winks of sleep in the morning. But more sleep equals less time to get ready, and often means waiting to get into the office before having breakfast or worse – grabbing a less-than-ideal donut or bagel, or skipping breakfast altogether. Since most offices don't have a full kitchen with stoves, ovens, and appliances galore, here’s a quick and easy office-friendly recipe that is nutritious, tastes good, and requires zero cooking appliances.
Tools You’ll Need:
- Glass or cup
- Spoon
- Knife
Ingredients:
- 1 yellow mango
- 1-2 oz mixed nuts (we’re using Fruit for Thought Roasted Salted Mixed Nuts)
- 6-8 oz of plain yogurt (we’re using Clover Organic Plain Yogurt but please feel free to use a yogurt of your choice)
To prep, cut the yellow mango into bite-size cubes. We recommend using the crosshatch technique when cutting your mango to make it even easier. For a how-to on cutting a mango, check out this blog post how to cut a mango.
Instructions:
It’s all about layering. Alternate layers of yogurt, mixed nuts, and cubed yellow mango. Continue laying until you get close to the rim of your glass or cup.
